Production zone: Piedmont Region, Province of Asti
Climate: Mediterranean, characterized by harsh winters with temperatures reaching -15°C, and hot and humid summers with temperatures reaching 35° C
Soil: sandy, calcareous and rich of mineral salts
Altitude: 180 – 350 meters above sea level
Training system: traditional Piedmontese guyot with a vine density ranging from 4,000 to 4,500 vine stocks per hectare
Production yield per hectare: 110 quintals
Average age of the vines: 20-30 years
Vinification: fermentation with brief skin contact at a temperature of around 12°C for 30 days
Colour: rosé with typical yellowish nuances reminding the onion skins
Aroma: intense, persistent, intriguing with floral notes combined with fairly fruity hints, typically tropical; pineapple, mango and pawpaw
Taste: dry, harmonic and fresh
Total acidity: < 5.90 gr./l
Dry extract: 27 gr./l
Serving temperature: 8°-10° C
